4 lambs this week, looks like 2 St. Croix, and two crosses we are excited about. More on the way. I should get a picture. The crosses are our St.Croix and another hair sheep, Dorper. Which I never loved but the crosses are beautiful white with black, very dressy!

Recipe - Osso Bucco

Osso Bucco is cut like thick steak, and eats like fall apart roast. Internet recipies (European usually) are similar to each other with seared meat, veggies, tomato paste, wine or beer and broth. Then slow cook.

Simply use a dutch oven or crock pot or lidded pot or pressure cooker. 

The Giada recipe was great. We simplified it - no string, no cheese cloth, no wine, no celery. Just browned/seared the meat in avacado oil (then salt and pepper), started onions and carrots, added broth and cooked. 

Tip: stand the cuts on end.
